You'll see the actual shape of data that breaks a relational table (deeply nested, wildly variable between records, or needing to scale writes across machines) and why a document or key-value model handles it cleanly where forcing it into rows and joins wouldn't.
What you'll be able to do
Given a real workload, you'll be able to say which database family actually fits it and why — not "NoSQL is faster," but the specific tradeoff (usually consistency or query flexibility) you're accepting in exchange for that speed, which is exactly the judgment call that separates someone who picked MongoDB because it's trendy from someone who picked it because the data genuinely needed it.
